Phase 4- Healthy Oatmeal Banana Muffins

Oatmeal Banana Muffins 

Preheat oven to 375 F

½ c. oil

2 eggs

1 c. mashed banana (or pumpkin)

½ c. warmed honey

¼ c. plain yogurt

1 t. baking soda

1 ½ c. whole wheat pastry flour

¾ t. salt

1 c. rolled oats

Optional: 1 c. chopped fruit or carob chips

Combine oil, eggs, mashed banana, and warmed honey. Set aside. Mix together yogurt and baking soda in small bowl. Set aside. Combine flour, salt, and oats. Add liquid ingredients to dry ingredients and mix well. Pour into muffin pans sprayed with oil or muffin cups. Bake 18-20 minutes.
