Beef and Red Pepper Pesto Salad

Pesto: 2 large roasted red peppers
1/3 cup chopped walnuts
2 minced cloves garlic
2 Tbsp olive oil
1/4 tsp salt

Blend in food processor till chunky.

Salad: 4 cups arugula
1/4 cup feta cheese
1/2 cup croutons (I used crushed melba toast)
1 pound steak grilled and thinly sliced

Combine arugula, feta and croutons on plate. Top with steak and spoon 
on pesto.

DELICIOUS!!!!
