Phase 2 – Meatballs

Using any of the HCG “allowed” meats (chicken, turkey, veal) I make meatballs by mixing the ground meat with chopped onion, parsley and celery and flavoring it with some sea salt and pepper. For spicy, I sometimes add hot pepper flakes. I mix all of the ingredients together and shape it all into small size balls. I use my steamer to cook them. It’s fast and very simple and stores well for few days and can be eaten (even cold) @ Eldora’s parking lot J

    Cauliflower Rice

    This is a great substitute for rice and very simple to make! It looks like rice on your plate and absorbs the flavor of the protein accompaniment, very satisfying. I’ve recently served it with a spicy chicken curry.

    Ingredients: 1/2 to 1 head of cauliflower, salt or garlic salt

    Process the cauliflower until it is the size of rice grains, either using the plain steel blade or the shredder blade in your food processor, or shred it with a hand-held grater, or use a knife — just make sure to chop it into fine pieces.

    Place it on a microwaveable plate, sprinkle with salt and tightly cover with plastic wrap. Microwave 6 minutes on High. Do not add any water.

    That’s it!

    Hi all I just wanted to put something in to remind everyone that this diet is not an exact science. What may work for you, may
    not work for some people and vis-versa. If you cheat, you have to deal
    with the consequences and that if you are not losing it is not
    Jennifer’s fault!! Not that any of you would blame her but some people
    seem to be thinking that she is responsible if they do not lose the
    weight or don’t lose it fast enough!! I have to laugh at that. Come on
    people! Take some responsibility for yourselves. She did not get you
    in your overweight position. She cannot be responsible for you losing
    the weight but she has given you the tools to help you lose the weight.
    It is up to you to use these tools wisely and plan out your meals
    carefully. It does work. It is hard work too being on this diet but
    anything worth having is not easy to gain. You have to want it and be
    willing to follow through. Believe you me, right now I am so wanting to
    stop and go to Phase 3 but there are two things stopping me. One, the
    money I have already spend on the food for the next couple of weeks.
    Two, (like a good book or movie that you can’t wait until the end to
    find out what happens) I need to see this through to see how the end of
    this 6 weeks turns out. It may be that these next couple of weeks may
    be bring a big weight loss for me and if I were to stop, I would never
    know. I have come to far to not see this through.
